Instructions:

  1. Put both flours in a large mixing bowl.

  1. Add in a separate bowl salt, sugar, dry yeast and 4 tablespoons warm water, mixing well until all the ingredients are well combined.

  1. Make a well in the center of your dry mix and pour in the rest of your warm water, olive oil and the flours, and mix everything with a spoon. You’ll have a pretty sticky dough.

  1. Cover your mixing bowl with a clean kitchen towel and leave in a warm place for about an hour or until it doubles in size.

  1. Deflate your dough using a spoon. Give it a little mix and transfer it to a prepared loaf tin.

  1. Sprinkle the dough with pumpkin seeds and sesame seeds and cover with a towel and leave it to the side for 1015 minutes.

  1. Bake your wholemeal bread in the oven at 350 degrees F for approximately 3045 minutes. You will know it’s baked if it sounds hollow as you tap it gently underneath. Take it out onto the cooling rack and leave to cool slightly before you slice it.
