2/3 cup non dairy margarine
1 cup unrefined cane sugar
1 teaspoon vanilla
2 Tablespoon cornstarch
1/4 cup water
2 ¼ cups unbleached white flour
¼ teaspoon salt
1 teaspoon baking powder
Mix together the cornstarch and water and set aside. This is acting as an egg replacer in the recipe.
Combine the margarine, sugar, and vanilla with an electric mixer. Add the cornstarch mixture and mix again for about 2 minutes. Add the flour, salt and baking powder. Use the electric mixer to combine until just blended.
Place dough on a floured surface. Roll out down to ½-inch thickness. Cut using a cookie cutter and place on greased cookie sheet. Bake at 350°F for 10-12 minutes.
