16 ounce container tofu (firm)
1 teaspoon rosemary
1 teaspoon thyme
½ teaspoon garlic granules
1 teaspoon salt
1 teaspoon red pepper flakes
2 Tablespoon oil
1 Tablespoon maple syrup
⅓ cup non dairy milk
2 teaspoon lemon juice
1 ½ cups flour
½ teaspoon baking soda
1 cup vegan cheese (of choice)


  1. Use a tablespoon to scoop up batter and form balls.
  2. Place on a greased baking sheet or casserole pan.
  3. In a medium bowl, crumble up the tofu. Add the spices, oil, maple syrup, milk, and lemon juice. Mix well.
  4. Add the flour and baking soda and combine with wet ingredients.
  5. Add the cheese and mix until just combined.
  6. Bake at 350°F for 40 minutes. Makes about a dozen balls.
