Peppermint Bark

Description: You will surely not regret trying this vegan peppermint bark recipe, except maybe when you are reaching for seconds, thirds, and fourths. I love the odd shapes of traditional peppermint bark that comes from breaking the pieces apart by hand. This recipe is a sweet, simple, and fun holiday classic!
Ingredients:
- 3 vegan milk or dark chocolate bars or 2 cups vegan milk or dark chocolate chips (Please visit F.E.P.’s chocolate list to help make informed choices on chocolate selection)
- 3 vegan white chocolate bars or 2 cups vegan white chocolate chips (Please visit F.E.P.’s chocolate list to help make informed choices on chocolate selection)
- 2 candy canes (crushed)
- 2 tablespoons coconut oil
- 1 teaspoon peppermint extract

Instructions:
- Melt the milk/dark chocolate with 1 tablespoon coconut oil on low-medium heat. Once it starts to melt, mix the coconut oil evenly. This process should not take long, so watch it throughout the process.
- Once the mix is completely melted, turn off the heat and add ½ teaspoon peppermint extract. Mix it into the chocolate thoroughly.
- Pour the chocolate on a tray lined with parchment paper and use a utensil to flatten it into a thin, rectangular, and flat layer. Remember that it does not need to be perfect! Sit on the counter for 10 minutes.
- Repeat steps 1 and 2 for the white chocolate.
- After the first layer of milk/dark chocolate has set for 10 minutes, pour the white chocolate on top. Remember, the milk/dark chocolate should be slightly hardened but not completely so that both layers can mold together.
- Sprinkle the crushed candy canes on top of the bark and allow it to set in the fridge for at least 30 minutes.
- When breaking apart the peppermint bark, you can use your hands to break up pieces as big or small as you want. You can also use a knife. Enjoy!
