Orzo Salad

Description:
All of the ingredients pair so well together to create this flavorful salad.
Ingredients:
1 cup uncooked orzo
1–2 tablespoons red wine vinegar
½ cup nuts of choice (macadamia nuts used here)
Black sesame seeds
1 carrot
1 bunch kale
½ bunch parsley
1 stalk celery
1–2 tablespoon oil
Salt to taste
Pepper to taste

Instructions:
- Cook the orzo per the directions on the back of the box.
- Drain the water and run cold water over it until it’s no longer hot.
- Slice carrots into small pieces, chop kale, chop parsley, and chop celery into small pieces.
- Once the orzo has cooled, add all ingredients to a large bowl. I suggest starting with 1 tablespoon red wine vinegar, tossing the salad, then adding more if needed.
Notes:
Make sure to adjust the oil and vinegar quantities to suit your tastes. And make sure to season it well since there’s a fair bit of orzo in here.
