No-Bake Peanut Butter Chocolate Pie

Description:

This peanut butter chocolate pie is my new favorite dessert in rotation!


Ingredients:

Chocolate crust:

½ cup dates

1 cup almond flour

1 cup pecans

3 tablespoons cacao powder (please see F.E.P.’s Chocolate List for recommended brands)

 

Filling:

1 can coconut milk

1 cup peanut butter

6 tablespoons maple syrup

1 tablespoon ground flax seed

 

Chocolate topping:

2 tablespoons melted coconut oil

3 tablespoons maple syrup

3 tablespoons cacao powder (please see F.E.P.’s Chocolate List for recommended brands)

½ cup chopped peanuts

Instructions:

  1. Blend all crust ingredients in a food processor or blender.
  2. Remove the mixture and pat into the bottom of a springform pan, and place into the freezer.
  3. Blend all filling ingredients in a food processor or blender until smooth.
  4. Remove the pan from the freezer and pour the filling on top of the crust. Freeze for 34 hours to let sit.
  5. Mix chocolate topping ingredients together well and pour on top of pie, spread over pie quickly as it will start to harden as it cools.
  6. Sprinkle chopped up peanuts on top and keep in the freezer until ready to serve, thawing 5–10 minutes before serving. Enjoy!
