3 Roma tomatoes, diced
2 ripe avocados, diced
½ cup red onion, diced
1 (15 ounce) can black beans, rinsed and drained
1  (15 ounce) can black eyed peas, rinsed and drained
1 ½ cups sweet corn
2 bell peppers (red and green), diced
⅓ cup Cilantro finely chopped


¼ cup olive oil
2 Tablespoon lime juice
1 Tablespoon white wine vinegar
1 teaspoon sugar
¼ teaspoon cumin
½ teaspoon salt
¼ teaspoon garlic granules

  1. Place all the diced vegetables, cilantro, and beans in a large bowl.
  2. In a separate small bowl, whisk together all the ingredients for the dressing.
  3. Pour the dressing over the ingredients in the large bowl and mix to combine.
  4. Serve with tortilla chips.
