Ingredients:
3 Roma tomatoes, diced
2 ripe avocados, diced
½ cup red onion, diced
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can black eyed peas, rinsed and drained
1 ½ cups sweet corn
2 bell peppers (red and green), diced
⅓ cup Cilantro finely chopped
Dressing:
¼ cup olive oil
2 Tablespoon lime juice
1 Tablespoon white wine vinegar
1 teaspoon sugar
¼ teaspoon cumin
½ teaspoon salt
¼ teaspoon garlic granules

Instructions:
- Place all the diced vegetables, cilantro, and beans in a large bowl.
- In a separate small bowl, whisk together all the ingredients for the dressing.
- Pour the dressing over the ingredients in the large bowl and mix to combine.
- Serve with tortilla chips.
