Description:

A warm, cozy, comfort classic. You will surely love this dish, best shared with loved ones. 

 

Ingredients:

 

3 tablespoons vegetable oil

3 tablespoons vegan butter 

½ onion, chopped

45 cloves garlic, chopped

1 cup chopped carrots

1 stalk celery, chopped

2 small potatoes, diced (I use Yukon gold potatoes) 

¼ cup + 2 tablespoons unbleached all-purpose flour 

4 cups no-chicken or vegetable broth

½ cup unsweetened oat milk or soy milk (do not use almost milk) 

1 teaspoon dried thyme

1 cup frozen or fresh peas

2 cups chopped seitan chicken, tofu, or chicken substitute of choice 

Salt to taste

Black pepper to taste

3 teaspoons garlic powder 

3 teaspoons onion powder

2 teaspoons oregano 

1 package vegan pie dough

Instructions: 

  1. Preheat the oven to 385 degrees F. 

  2. Start by heating butter and oil in a pot. Once butter is melted, add onion. Once onion is translucent, add garlic. Once garlic is fragrant, add the spices: garlic powder, onion powder, thyme, oregano, salt, and pepper. 

  3. When everything is incorporated, add carrots and celery. Toss and let saute for about 2 minutes. Add more oil if needed. 

  4. Add potatoes. Toss and saute. Add more oil if needed. Once potatoes are softened, add the vegan chicken/vegetable broth. Let it simmer and toss every few minutes on medium heat.

  5. In a separate pan, begin cooking vegan chicken pieces. Cook until golden brown. 

  6. Once the vegetables are softened, add in plant milk. Then slowly start sifting in flour and mix for 23 minutes. 

  7. Then, add chicken pieces and frozen peas. Stir and let it simmer for about 10 minutes on medium heat. 

  8. Turn off heat and let the mixture thicken for about 5 minutes. 

  9. During that time, roll out vegan puff pastry. Use the bowl you’re going to use and turn it upside down and trace the puff pastry piece along the edge. This will help create the shape to place it on top. 

  10. Pour mixture into the bowl and place pie dough pieces on top. Poke holes to release the air. 

  11. Put it in the oven for 2025 minutes at 385 degrees F, or until the puff pastry is golden brown. Enjoy!
