Caramelized Onion Vegan Sausage

Description:

I fancied sausages for lunch one time so I made these beauties! 

Ingredients:

1 cup of pea protein chunks (broken up)

1 cup of vegetable stock

2 tablespoons soy sauce

1½ tablespoons maple syrup

1 tablespoon mushroom sauce

½ tablespoon white pepper

½ teaspoon MSG

1 teaspoon sage

1 teaspoon paprika

½ teaspoon allspice

½ cups vital wheat gluten

½ cups chickpea flour

1 tablespoon olive oil

1 onion

2 garlic cloves, minced

½ teaspoon salt

1 tablespoon fennel seeds

1½ tablespoons sugar

1 tablespoons Dijon mustard

Instructions:

  1. Combine vegetable stock, soy sauce, maple syrup, mushroom sauce, white pepper, MSG, sage, paprika, and allspice in a large bowl.
  2. Add the pea protein chunks to the mixture and let soak.
  3. Meanwhile, caramelize the onions in a skillet with olive oil, garlic, salt, fennel seeds, sugar, and Dijon mustard for 20 minutes on medium heat. Keep adding water to avoid sticking.
  4. Add the skillet ingredients to the wet mix and stir to combine.
  5. Add the vital wheat gluten and chickpea flour to the mix and stir to combine.
  6. Shape them into 8 tinfoil wraps and steam for 30 minutes.
  7. Allow to cool. Enjoy!
