Instructions:

  1. Preheat the oven to 400 degrees F.

  2. Peel the skin off the butternut squash and remove the seeds and stringy fibers.

  3. Pell the skin off the shallot and cut into a couple medium-sized pieces.

  4. Place butternut squash cut side up, shallot, and garlic on an oven-safe pan. Add sprigs of thyme on top of the squash and drizzle oil on all of it. Then place in the oven.

  5. After 30 minutes, remove the garlic and shallot pieces, and set aside. Leave the butternut squash in the oven for another 30 minutes.

  6. Cook pasta, and strain the water, reserving one cup of the water. Set pasta and water aside.

  7. Remove the garlic cloves from its skin and add to a blender with butternut squash, nutritional yeast, shallot pieces, plant milk, cashews, lemon juice, miso paste, tapioca flour, nutmeg, paprika salt, and one cup of your pasta water. Blend until completely smooth.

  8. In a large bowl, add cooked pasta and the butternut squash blend and mix thoroughly so that all pasta is evenly coated.

  9. Place the pasta in an oven safe casserole dish.

  10.  In a bowl, combine all breadcrumb mixture ingredients and coat the macaroni with the breadcrumbs so that it is completely covered.

  11.  Place the dish into the oven on 400 degrees F for about 25 minutes, or until the top is slightly browned, then remove once it is.

  12.  Enjoy!
