Apple Cider Donuts

You will need a donut mold for this recipe! You can use a store-bought mold or do it yourself with a muffin tin or shape aluminum foil.
Does it ever feel like the closest you’ll get to fall festivities, tasty donuts, and other seasonal sweets is staring at them on your screen? If you’re wanting that nostalgic flavor in a version that is vegan, gluten-free, oil-free, this homemade apple cider donut recipe is for you!
Ingredients:
1 teaspoon baking soda
¼ cup tahini
½ cup applesauce
1 cup apple juice or apple cider
2 teaspoon vanilla extract
2 tablespoons apple cider vinegar
Pinch of salt
Optional Sugar coating:
1 tablespoon tahini
2 tablespoons sugar
½ teaspoon cinnamon

Instructions:
- Mix dry ingredients then make 3 separate wells.
- Add wet ingredients into separate wells. Add the vanilla and vinegar last.
- Slowly mix until lumps have nearly disappeared, careful not to overmix.
- Add the batter to each donut mold.
- Bake at 350 degrees F for 15–17 minutes or until golden brown.
- Let cool then remove from pan.
- Brush donuts with tahini and sprinkle on cinnamon sugar mixture.
